इडली (idli) is a popular food in India, and has a spongy texture. The dish originated in South India, where it is usually made with black lentils and rice. As idlis gained popularity around India, they were adapted to each state's tastes. For example, some areas substitute rice with semolina. Regardless of the ingredients, idli are made using a metal 'idli stand', which sits inside a cooker and gives them their round shape.
