An andouillette is a sausage filled with...well...lots of things. They are usually made using pork intestines, among other animal odds and ends, and are generally a 'you-either-love-it-or-hate-it' item. Sometimes on menus the acronym AAAAA accompanies the word andouillette. This stands for the Association Amicale des Amateurs d'Andouillettes Authentiques.
